The chef builds the tab. You eat it. The next night, a new tab. No favourites, no past orders, no algorithm. Just dinner the way the kitchen meant it tonight.
Watermelon on the grill until the sugars char. Whipped feta underneath. Mint, torn, on top. Eat it cold against the heat.
Slow-cooked tomato, three hours on low. Sourdough rigatoni, hand-rolled this morning. Garlic crumb for the crunch we miss.
Olive oil instead of butter. Citrus zest. A spoon of crème fraîche on the side. Cake we serve to people we like.
the algorithm doesn't know what you should eat. we do.
Food delivery built an industry on the premise that you, the customer, know what you want. So it gave you a hundred restaurants, a thousand dishes, a recommendation engine, and a discount code. And then, somehow, every Tuesday night you still ordered the same pad thai.
TAB is the opposite of that. One chef. One tab. One night. The kitchen builds the menu the way the kitchen wants the food to be eaten — together, in sequence, while it's still hot. You don't pick. You don't scroll. You don't rate.
There is no app to download. There is no recommendation engine to game. There is no “based on your past orders.” There is only what the chef is cooking tonight, what it costs, and whether you'd like to sit at the table.
The Format
How TAB works, in three rules.
No menu choices.
The chef cooks one tab. You eat what they made, the way they meant it. The closest thing to sitting at the counter without sitting at the counter.
No app.
Order by tapping the open tab in your browser. We text you when it’s at the door. No download, no login, no notification you forgot to silence.
No reviews.
We don’t collect stars. The next night’s tab is the only review that matters. If the kitchen is wrong, the kitchen tries again tomorrow.
The Kitchen
who's cooking tonight
Chef Rina Halabi.
Rina trained in Copenhagen and Beirut. She came back to Dubai in 2024 to cook the food she actually wants to eat — vegetables charred until the sugars give up, slow tomato sauces, sourdough pastas hand-rolled the morning of service.
TAB is her shift. Three courses, every night, for as long as she's in the kitchen. Tomorrow it might be a different chef, a different city, a different tab. Tonight it's Rina.
